Super Easy Cocoa Powder Cookies

1/2 cup butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Make sure that the butter is at room temperature, or put the butter in the microwave for about 15 seconds just to soften it up.
  3. Using a mixer, cream the butter, brown sugar and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract and mix until combined.
  5. In a separate bowl, sift the flour, cocoa powder, baking soda and salt.
  6. Add the dry ingredients into the wet ingredients and mix until everything is incorporated and you're left with a luscious chocolate dough.
  7. Make truffle-sized balls and place them on a parchment lined baking sheet.
  8. Bake for exactly 8 minutes--no longer--no less.
  9. Let them cool and you can put a layers of icing sugar on top of it and some colourful chocolate rice.
